Stuffed Mushrooms




These mouthwatering stuffed mushrooms are delicious appetizers which are easy to prepare.  All you need is large portabella mushrooms, shrimps, bacon and shredded cheese.  They are great for parties or gatherings. Your guest will love them and ask for more, for sure!

Serving Size:  4
Preparation Time: 20 minutes
Cooking time: 20 minutes

Approximate calories per serving: 43 per mushroom 

Ingredients:
16 Large Portabella Mushroom
16 Uncooked Medium or large shrimps
Completo 
Garlic powder 
½ package of turkey bacon 
Mozzarella shredded cheese 

Directions:
De-stem the mushroom set aside, place the shrimps in a bowl sprinkle completo and garlic powder.
Cut the bacon  ½ inch cook the bacon set aside. 
Take the mushrooms  place a shrimp inside the cavity.
Place in oven on 400 for 10 minutes or until the shrimp is red and cooked
Place a piece of bacon on top of the shrimp and place a tbsp of cheese on top of the mushroom place back in the oven or another 10 minutes or until the cheese has melted.  Cool and enjoy!

Chicken Salad Tostada


Do you like Mexican Food?  Do you love spicy food?  Well you should try these awesome tasting Chicken Salad Tostadas.  In every bite you would taste the crunchy tostada and the delightful taste of the chicken mixed with jalapeños.  This is a hot, spicy, treat that you and yours guests will absolutely love.  You can prepare it mild just using the juice of the jalapeños or hot and spicy using the whole jalapeños.

Ingredients:
1 lbs Chicken Breast
2 envelops Sazon Goya
1 cup frozen mix peas & carrots
½ can Jalapeño juice
1 cup mayonnaise

Directions:
On medium heat place the chicken in a sauce pan sprinkle the sazon on the chicken. Boil the chicken until fully cooked.  Once the chicken is fully cooked. Take out the chicken bring the chicken into a large bowl leaving the chicken broth in the sauce pan place the peas and carrots in the sauce pan turn the heat on to medium heat.  Place the sauce pan on the heat for about 3-5 minutes.
Shred the chicken as thin as possible. Drain the water from the peas & carrots mix them in with the shredded chicken. Mix in the jalapeño juice into the shredded chicken.  Mix in the mayonnaise.

Tip:
If you like it hot spicy all you need to do is add bits of jalapeños in the chicken mixture along with the juice. Depending on how hot spicy you like it that’s how much Jalapeños you’ll use.

Stuffed Platanitos Maduros (Stuffed Ripe Plantains)


My delightful stuffed platanitos Maduros (stuffed ripe plantains) are more than delicious they have an awesome taste.  I’m sure that your super bowl crowd will tackle them.  I have serve this great tasting delights for several gatherings and they always get a great review.  These amazing platanitos are stuffed with shredded chicken and parmesan cheese which make your taste buds roar for more.

Serving Size: 10-12
Preparation time: 15 minutes
Cooking Time: 20 minutes

Ingredients:
1 chicken breast
2 cups of water
2 cloves of garlic thinly chopped
Adobo
Complete Seasoning
Garlic Powder
1 medium onion ½ sliced the other ½ chopped
½  small red pepper sliced elongated
½  small green pepper sliced elongated
1 8oz can tomato sauce
4 tbsp oil
7 ripe plantains pealed and cut in slices diagonally.
1 cup Parisian Cheese

Directions:
On a medium size cooking pot place the chicken, garlic, copped onions sprinkle to taste: adobo, complete seasoning, garlic powder, sazon, and the water on medium to high heat and cover.  Let that boil until the chicken is soft enough to be shredded.  Take the chicken out place in a cutting board. Let the chicken cool of for about 20 minutes.  Shred the chicken and put the chicken back into the water.   Pour in tomato sauce, peppers, and  sliced onions.  Turn the heat back on to medium heat stir once or twice  place a lid on  cooking pot for another 10 minutes or until the peppers and unions are soft and ready.
On a large frying pan on medium heat place the oil. Once the oil is fairly hot place each piece of plantain on it until brown turning it for both sides turn brown.
Place the plantain in a serving plate take the shredded chicken place it on top of the plantains on top of that place the parmesan cheese.

Tips:
You can prepare the chicken a day or two earlier.

Coconut Shrimp


These crispy coconut shrimps are easy to prepare and would leave a delightful taste in your palate.  This is another great recipe for your football game party or any other gatherings. Mmmm!! There is a taste of tropics in every scrumptious shrimp.  Every seafood lover in your crowed will absolutely love them.  I guarantee it!

Serving Size: 12-15
Preparation Time: 25 minutes
Cooking Time: 25 minutes

Approximate calories per servings: 150 per two shrimps

Ingredients:
2 lbs jumbo uncooked shrimps peeled
Complete seasoning 
2 eggs
¼ cup all purpose flour
2 cups coconut flakes
½ cup oil
 
Directions:
Place shrimp on a blow sprinkle complete seasoning. Set aside.
In a small bow scramble eggs.
Combine flour and coconut flakes in another bowl.
Take the shrimp by the tail and dip it in the eggs then in the mixture of flower and flakes. Do this to all the shrimps. Place in the refrigerator for 15-30 minutes.  
On a large frying pan place oil on medium heat wait until the 350 degrees or when sprinkling flour it sizzles.
Fry the shrimps turning once or twice until fully brown.

Hot Sausage Mini Wraps


This hot sausage mini wraps are really as easy as 1,2, 3.  They are a great appetizer for your friends and family at your next supper bowl party.  These mouthwatering wraps will go as fast as you make them.

Ingredients:
2 pkgs. Italian Sausage
1 pkg. light Italian Flatbread (light Italian herbs)
1/3 cup Thousand Island dressing
1/3 cup ketchup
½ head of romaine lettuce
Tooth picks

Directions:
Grilled the sausage on low heat for about 12-15 minutes depending on your grill. Place a piece of lettuce, 1 tsp of dressing, 1 tsp ketchup and the sausage on top of flatbread. Roll up the flatbread around the sausage. Pining it with tooth picks then slicing them about an inch thick.

Garlic and Onion Hummus


Garlic and Onion Hummus is a great tasting dip for your game party or for any party.   Hummus is easy to prepare and economical.  My sister usually serves this dip when ever she has get-togethers.  It is usually the first to empty the appetizer table.  When serving this delicious hummus your crowd will always yell hurray!

Serving Size: 20-25
Preparation Time: 15 minutes

Ingredients:
2 tbsp olive oil
3 slices of a medium onion
2 small garlic cloves
1 15oz  can garbanzo beans
Pinch of salt

Directions:
On medium heat place oil, garlic and onions in a small frying pan for about 5 minutes or until they are lightly brown.
Place the garbanzo beans and the oil, garlic, onions and a pinch of salt in a blender.  Blend for 3-5 minutes until the beans are well blended.

Tips:
You may serve hummus dip with pita chips or tortilla chips.

Bacon Wrapped Shrimp


Bacon Wrapped Shrimps are one of my favorite appetizers.  This is yet another great dish for your hungry guests at your supper bowl party.  They are low in fat because they are prepared with turkey bacon.  This will surly a touch-down for your guests and they’ll be asking for more.

Serving Size: 12-15
Preparation Time: 20 minutes

Ingredients:
2 lbs jumbo uncooked shrimps peeled
Complete seasoning 
1 pkg. turkey bacon cut in half
30 Tooth picks

Directions:
Place shrimps in a bowl sprinkle complete seasoning.
Wrap the ½ of strip of bacon around the shrimp holding it with the tooth pick to this with all the shrimp.
Place a large frying pan on a medium heat and place the shrimps on the pan (you do not need oil) until shrimp has turned orange and the bacon is brown on both sides.

Platanitos Maduros (Ripe Plantains)


My Platanito Maduros (ripe plantains) are so wonderful for your super bowl party or for any other party.  Have them plain or have them with sour cream as a dip.  They are wonderful either way.  Most of all a no brainier to prepare.   They will be gone before you know it!

Serving Size: 10-12
Preparation time: 10 minutes
Cooking Time: 20 minutes

Ingredients:
4 tbsp oil
7 ripe plantains pealed and cut in slices diagonally
For dipping:
½ cup of sour cream
Salt to taste

Directions:
On a large frying pan on medium heat place the oil. Once the oil is fairly hot place each piece of plantain on it until brown turning it for both sides turn brown.

For Dip:
Place sour cream in a small container sprinkle salt mix it in well.

Tips:
After frying plantains you may place a paper napkin on top of the plate where you are going to place the plantains so that it could soak up the extra oil.
If you need to put more oil while you are frying the plantains you may do so.

Buffalo Wings


Mmmm!! Mouthwatering buffalo wings for your super bowl crowd or for any occasion.  This is an appetizer that could not be left out.  I’ve prepared these lip-smacking wings for all different occasions and it has always been a big kick.

Serving Size: 10-12
Preparation time: 20 minutes
Cooking Time: 40 minutes

Ingredients:
40 wings
Adobo
Garlic powder
1 ½ tsp ginger
3 tbsp cayenne pepper
3 tbsp paprika
2 cups of butter
2 cups hot souse
A dash of black pepper

Directions:
Place wings in a large bowl sprinkle adobo, garlic powder, ginger, cayenne pepper and paprika.  Mix in well.  Refrigerate for 60-90 minutes.  
Combine butter, hot souse and pepper in a small saucepan.  Place on medium heat until butter is melted mixing well. Set aside
Place chicken in a rack two greased 15” x 10”  backing pans. Bake at 350 for 40 minutes.  Pour in the butter mixture evenly so that every piece of wing is covered with this mixture. Place back in the oven to grill for 10 minutes or until juices run clearly.

Tip:
Cream cheese and yogurt replace the traditional blue cheese and range sauce.

Supper Stuffed Nachos


My supper stuffed nachos are supper to serve your guest in your super bowl party or for any other party or gatherings.  A crowd usually gathers when I serve my marvelous super stuffed nachos. These cheesy, scrumptious nacho chips are filled with flavorsome chicken, black olives, green onions and tomatoes just to name some of the ingredients.  This flavorful appetizer is easy and fun to prepare, but most of all your guest will cheer for.

Serving Size: 12-15

Ingredients:
1 large bag of tortilla chips
2 cups cooked shredded chicken
15 oz black beans drained
1 small can sliced black olives drained
3 plum tomatoes chopped
2 cups mozzarella shredded cheese

Directions:
On a large serving tray spread a bed of tortilla chips.  On top of that place chicken, beans, olives, tomatoes, and mozzarella cheese. Place on oven to grill for about 8-10 minutes or until cheese melts.

Tips:
You can add jalapeños and green onions to taste.

Halloween Cracker Treats

When my kids were younger they loved me to decorate, carve pumpkins and to prepare treats for them on Halloween. I would always prepare these great treats as appetizers on Halloween parties. It was always a hit among friends and family.
These great tasting creatures are made with butter crackers, cheddar cheese, mozzarella cheese, peanut butter and nutella. Little pumpkin faces are made with cheddar cheese and pepperoni. Little mummies faces are made with mozzarella cheese and olives. Spider webs are made from peanut butter and nutella. The ghost faces are made from marshmallows and nutella. A delicious treat everyone would love.

Serving Size: 20
Preparation Time: 10 minutes

Ingredients:
80 butter crackers
1 can easy cheddar cheese
10 slices of pepperoni
1 cup mozzarella cheese
10 black olives slices in ½
1 cup peanut butter
½ cup nutella in a zip log bag
80 giant marshmallows

Directions:
To make the pumpkin faces: on a cracker spread cheddar cheese going round. Make the eyes and mouth by cutting pepperoni with a kitchen scissors, and placing them on top of each cracker.
To make the mummies faces: on a cracker place mozzarella cheese going straight to one side of the cracker. Place the olives on top of the cracker to make as eyes.
To make spider webs: on a cracker spread peanut butter. Place a dot of nutella in the middle, place a circle around the middle, and another circle around the edge of the cracker. Take a butter knife with its edge make an ex or a star on the cracker to make the web shape.
To make the ghost faces: On a marshmallow place the two eyes by placing two dots of nutella on each side.

Pizza Wedge Bites

I first served these great tasting appetizer to my son and his friends. It was a great hit. I remember when I was younger and they would serve pizza wedges in school. I decided to prepare the same pizza wedge and just cut the loaf of bread sideways and prepare it exactly like the pizza wedge. This is how I created these pizza wedge bites. This is a great appetizer, or snacks for any occasion.

Serving Size: 4-5
Preparation time: 10 minutes
Cooking time: 5 minutes
Money savings: $7.00
Approximate calories per serving: 190 for serving of 4

Ingredients:
1 long bread Italian or French cut in ½ inch thick
1 cup of spaghetti sauce
1 bag of mozzarella cheese
11 slices of pepperoni

Directions:
Place the pieces of bread flat on a cookie sheet. On top of each piece of bread place about 1½ tablespoonful of sauce on top. Then take about 1½ tablespoonful of cheese and place that on top and then place the pepperoni on ½ of them not all so that they would have variety.

Tip:
If you like you can get 1 already cooked chicken breast or grilled chicken breast. Cut it up and place them on top of the bread.

Meatballs & Parmesan Cheese

These juicy meatballs will be a hit in any party or gathering or any day of the week. You can serve them as appetizers or in your average spaghettis and meatballs. How ever or when ever you want to serve them. This hearty dish you can make ahead and they are sure to please.

Serving Size: 4

Preparation Time: 30 minutes
Cooking Time: 1 hour
 
2/3 cups of parmesan Cheese

 
Approximate carlories per serving: 160

Directions:
Take the green pepper, cilantro, tomato, and onion but all that in the blender on high until it grins.
Place the meat on a bowl, sprinkle adobo, complete seasoning, rosemary, bread crumbs and black pepper.

Pour blended mixture into the meat. Mix with your hands, pour the egg on top of the meat. Take the meat about a tbsp of the meat or 1 ½ inch balls and make into a ball, make all of the meat into small balls. Then take and put them into a cookie sheet or shallow baking trays and bake on 400 for 1 hour or until cooked.

2/3 cups of parmesan Cheese


Place on a dish to cook off a bit then pour parmesan cheese.

Ingredients:
2 small Green pepper
2 cilantro leaf and stem
1 small tomato
1 medium onion
2 lbs of ground meat
Adobo
Complete Seasoning
1tbsp of rosemary
½ tsp of black pepper
3 tbsp of bread crumbs
1 egg lightly beaten

Strawcheeckers


My daughter likes to experiment in the kitchen sometimes. She invented this good looking appetizer and called it Strawcheeckers. This great tasting whole wheat cracker smeared with cream cheese and a slice of strawberry on top is not only great tasting but it is also healthy. Not to many calories because it’s a whole wheat cracker. The cream cheese is also low calories. This could be a great appetizer or snack for everyone one to enjoy.


Preparation Time: 5 minutes

To double serving size just double ingredients
To reduce size just reduce the ingredients

Ingredients:
50 whole wheat crackers
17 Strawberries
8 oz cream cheese

Directions:
Very simple no-brainer. Take the whole wheat cracker spread it with cream cheese, then take a peace of strawberry and place it on top of the cheese.

Ceviche de Pescado

Ceviche de pescado is a beautiful raw fish marinated in lime. Many people think this delightful dish is raw fish when it has actually been cooked within the citrus of the lime.
It is funny how I get nostalgic when tasting this great ceviche. I could always remember when I was a little girl and when visiting my aunt house she would prepare this delightful dish because she knew how much we enjoyed it. I loved it then as much as I love it now. It is refreshing full of flavors just mingling around your mouth to wake up all your senses.

Serving Size: 6-8
Preparation time: 15 minutes
Cooking Time: 3 hours

To double serving size just double ingredients
To reduce size just reduce the ingredients

Ingredients:
1lbs of Tilapia Fish fillet d-boned cut in cubes
1 cup of lime juice
Dash of salt
Dash of pepper
1 medium tomatoes cut into cubes
1 medium onion cut into cubes
1 medium green pepper cut into cubes
5 leafs and stem of cilantro thinly chopped

Directions:
Take the fish place in a large bowl pore in the lime juice. Dash of salt and pepper to taste let it sit in the refrigerator for about two hours After that take the fish out and place the rest of the ingredients in the bowl then set aside in the refrigerator for one more hour then take it out and its all ready to eat.

Tips:
You can do the same raw shrimp, or with other raw fillet example corbine, sea bass and halibut fillet.

Spinach Hummus & Turkey Rap

Did you know that Hummus is made from chickpeas or garbanzo beans? As of-matter-of-fact Hummus is the Arabic name for Chickpeas, and garbanzo is the Spanish word for Chickpeas as well.
Hummus is the best alternative to mayonnaise. This spinach hummus and turkey Rap is a healthy, no-brainer easy snack or lunch. The phenomenal flavor of a whole wheat tortilla and the turkey ham and the earthy flavor of spinach hummus is joy to you palate. I’m positive to whom you’ll serve it to they will love it.

Serving Size: 6
Preparing time: 10 minutes

To double serving size just double ingredients and you would need the entire can of Chickpeas can
To reduce size just reduce the ingredients

Ingredients:
1 can of 15oz Chickpeas

2 cups of fresh spinach
1 packet whole wheat tortillas
1 lbs. of turkey

Directions:
To prepare the hummus you need to blend on high speed the hummus and the spinach.Take the tortilla lay it flat take spared the hummus, top it off with the turkey ham and roll it up into a wrap. Mmmmm eat it up!

Tips:
You can prepare this hummus as a dip and pita bread or Chips. You can also prepare the hummus with roosted Garlic all you need to do is roost the garlic then place the garlic and the Chickpeas on the blender you can add a sprinkle of garlic powder and there you have it.
You can even prepare the raps cut them in 1 inch thick and sever as appetizers or orderves for your guests
