Meatless Quesadilla
If you like a quick and easy 10 minute lunch or maybe dinner you should try preparing my daughter’s marvelous tasting meatless quesadilla. The tortilla contains black refry beans, green pepper, onions, and plenty of cheese. This is such a delicious dish not only a vegetarian would enjoy but anyone would just love it.
Serving Size: 1
Preparation time: 5 minutes
Cooking Time: 10 minutes

Approximate calories per Serving: 250
Ingredients:
Non-stick spray
1/3 cup 4 cheese Mexican mix divided
2 soft fajita size flower tortillas
4 tbsp re-fried beans
3 tbsp chopped green pepper
3 tbsp chopped onions
3 tbsp chopped tomatoes
Directions:
Place non-stick spray on a small pan on medium heat. Place the tortilla on the pan. On top of the tortilla place ½ of the cheese, beans, pepper, onions and tomatoes and the rest of cheese on top of the tortilla. Place the other tortilla on top of the all this and flip over with a spatula and press on the tortilla with the spatula for a minute or two until cheese has melted.

Healthy Tuna Sandwich
Healthy tuna fish sandwich is not only healthy, quick and easy but it is delicious. This is a great open-faced sandwich that’s been a favorite of my family for years. This has been our Saturday lunch menu hopefully you’ll make it yours.
Serving Size: 4
Preparation Time: 10 minutes
Cooking time: 10 minutes
Money savings: $4.00
Approximate Calories per Servings: 102
Ingredients:
1 can 6 ½ oz tuna drained
½ cup chopped green peppers
½ cup chopped onions
½ cup chopped tomatoes
1 tbsp freshly squeezed lemon
Salt and black pepper to taste
2 egg white
3 tbsp grated parmesan cheese
4 slices of pumpernickel bread/whole wheat
Directions:
Combine tuna, green peppers, onions, tomatoes, lemon juice, salt and pepper.
Beat egg whites until stiff and fold in the parmesan cheese.
Fold egg white mixture into tuna mixture.
Divide mixture among the pieces of bread slices. Placing it the center of each slice of bread.
Place each piece of toast on an ungreased cookie sheet. Bake in over for 450 for ten minutes or until top is lightly browned.

TBLT
TBLT (Turkey Bacon Lettuce and Tomatoes) This is the perfect sandwich lunch. When you are at home and don’t have any cold cuts and don’t know what to have for lunch . Here is a great sandwich you can try. It is healthier than the regular BLT because it is made from turkey bacon. It is delightful to taste the crunching of the bacon and the lettuce and to devour the sweetness of the tomatoes. This is a wonderful sandwich you will love.
Serving Size: 1
Preparation Time: 10 minutes
Cooking time: 15 minutes
Money Savings: $7.00
Approximate calories per serving 326.
Ingredients:
6 slices of bacon
2 slices of light wheat/white bread
½ tsp of light mayonnaise (your choice)
¼ tsp of ketchup (your choice)
3-4 slices of tomato
1 ½ leaves of Romanian lettuce cut and washed
Directions:
On medium heat on a medium frying pan place the bacon strips to fry until bacon is crisp.
Place bread in the toaster to lightly toasted.
Once the bacon and the bread is ready. Spread mayonnaise and ketchup on one side of both slices of bread.
Place the lettuce on top of the bread then the bacon, then the tomato. Then place the other slice of bread on top. If you like you can slice it in half or have it the way it is.

Pastrami, Eggs and Cheese Sandwich
This sandwich is a delicious way to start your day or end it. It doesn’t matter when you decide to have it breakfast, lunch or dinner it taste marvelous either way. A delight to your palate with plenty of pastrami, eggs white, stringy mozzarella cheese on sour dough bread. If you prefer you can certainly add lettuce and juicy plum tomatoes or sundry tomatoes. Just add a touch of mayo, ketchup and mustard and this would just perfect.
Serving size 1
Preparation time: 3 minutes
Cooking time: 5 minutes

Ingredients:
2 slices of bread
1 tsp of mayonnaise
1 tsp of ketchup
1/3 lbs of pastrami
1 tsp of mustard
2 slices of mozzarella cheese
1 tbsp of butter or oil
2 eggs white
Directions:
On both slices of bread spread mayonnaise and ketchup on them. Place the pastrami on both sides of each bread evenly. Spread mustard on both sides of the pastrami. Place the cheese on the top part of the sandwich. Place both sides of the bread on a taster oven until the cheese starts to melt.

Place the two egg white on a small bowl and scramble it. Place the butter on a small frying pan on medium heat. Place the scramble eggs on the frying pan. Once its starts to cook try to flip one side at a time in order for the egg be long to the shape of the bread, Place the eggs on top of the cheese and pastrami, put the sandwich together. Your are ready to taste the delight.

Turkey Mushrooms & Swiss Burger
Serving size 4
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Money Savers: $18.00
To double serving size just double ingredients
To reduce size just reduce the ingredients
Ingredients:
1 lbs ground turkey
Dash of salt
Dash of pepper
3 tsp soy sauce
Swiss Cheese
1 head of Romine Lettuce
1 small tomatoes sliced
For Mushroom Sauce
2 cans of sliced Mushrooms
2 tsp soy sauce4 tsp duck sauce
Directions:
Place the ground turkey on a bowl mix in the salt, peppers and sosoy sauce. Make the patties about ½ inch thick. Place on the grill or on a George Forman Grill for about 3 minutes or until cooked. Take them out .
Directions to prepare Mushroom sauce
Take a small sauce pan, pour in the mushrooms, soy sauce, and duck sauce. Let it simmer on low heat until it thickens.
Place the lettuce on whole grain sandwich rounds, place the a slice of tomatoes the lettuce, place the Patty on top of the tomatoes. Place the Swiss cheese on top of the patty, the mushroom sauce on top of the Swiss cheese and the top of the sandwich round on top of everything.
Tips:
You can accompany this with a bag of sweet potato fries all you need to do is place it in the oven for about 15 minutes on 400 And you have a great meal.

Pernil Wrap
Last night I prepared Pernil al Horno (Baked Pork Shoulder) Since I had leftovers I prepared pernil wraps for lunch. This again is delicious, and another no-brainer meal. The whole wheat tortilla, the lettuce and tomatoes are a healthy, and tasty lunch or snack.
Serving Size: 4-6
Preparation time: 5 minutes
Cooking Time 2 minutes
Money Saving: $6.00
Ingredients:
Whole Wheat Tortillas
1 head Romaine Lettuce washed and cut
2 tomatoes sliced
Shreded leftover pernil (pork shoulder)
In the microwave oven warm-up leftover Pernil for approximately two minutes then warm-up the tortilla for 30 seconds. Then lay the tortilla flat, place the lettuce the tomatoes and then the pernil then you wrap it.
Tip:
If you like you can add your favorite dressing or cheese for a better taste.

Spinach Hummus & Turkey Rap
Did you know that Hummus is made from chickpeas or garbanzo beans? As of-matter-of-fact Hummus is the Arabic name for Chickpeas, and garbanzo is the Spanish word for Chickpeas as well.
Hummus is the best alternative to mayonnaise. This spinach hummus and turkey Rap is a healthy, no-brainer easy snack or lunch. The phenomenal flavor of a whole wheat tortilla and the turkey ham and the earthy flavor of spinach hummus is joy to you palate. I’m positive to whom you’ll serve it to they will love it.

Preparing time: 10 minutes

Ingredients:
1 can of 15oz Chickpeas
2 cups of fresh spinach
1 packet whole wheat tortillas
1 lbs. of turkey
Directions:
To prepare the hummus you need to blend on high speed the hummus and the spinach.Take the tortilla lay it flat take spared the hummus, top it off with the turkey ham and roll it up into a wrap. Mmmmm eat it up!
Tips:
You can prepare this hummus as a dip and pita bread or Chips. You can also prepare the hummus with roosted Garlic all you need to do is roost the garlic then place the garlic and the Chickpeas on the blender you can add a sprinkle of garlic powder and there you have it.
You can even prepare the raps cut them in 1 inch thick and sever as appetizers or orderves for your guests
