Yogurt and Fruit Popsicle
This is a great, healthy and delicious snack when your kids come home from school.
This recipe is easy to prepare and all who taste it will love it. All it take is plain yogurt some kind of sweeteners, for example sugar, agave or honey if you want, and fresh fruits. I loved to make treats for my kids when they where younger. This is also a wonderful treat for kids birthdays and kids gatherings. This is in all a fine treat.
Serving Size: 16 popsicles
Preparation Time: 5 minutes
Freezer Time: 8 hours
Money Savings: $10-$12.00
Approximate calories per serving: 30
Ingredients:
32 oz plain yogurt
Sugar/honey/agave to taste
2 fresh kiwis
¼ cup blue berries
1 small banana sliced
¼ cup fresh strawberries sliced
Popsicle molds
Directions:
Place the yogurt in the a bowl mix sweetener.
Place pieces of the fruits in the mold then pour the yogurt into the molds.
Can alternate and pour yogurt into the mold to fill it have way then place pieces of fruits on it.
Then freeze them for about 8 hours and they are ready to devour
Tips:
If you would like you can puree the fruit and mix it in with the yogurt it also tastes delicious.

Strawberry and Banana Cream
This is a great strawberry season dessert. If you love strawberries as much as we do, wait until you try this desert. You would love this strawberry and banana Cream dessert. This is absolutely wonderful when you are craving sweet. It is delicious, easy and in ten minutes you have yourself a wonderful dessert.
Preparation Time: 10 minutes

Approximate calories per servings: 272
Ingredients:
4 Bananas
1 lbs. strawberries, plus extra strawberries for garnish
1 ¼ cup heavy cream, whipped
Sugar (if necessary)
Needs:
Food processor
Directions:
Peel the bananas and put in a food processor with the strawberries. Make into a puree and put in large bowl.
Stir the heavy cream into the whipping cream (sweeten if desire)
Mix the puree with the whipping cream.
Chill in the refrigerator until ready to serve.
Garnish with strawberry and serve with cookies.

Frozen Papaya Popsicle Sticks
You want to taste something smooth, refreshing on a hot summer day you may want to do it with a great tasting home made cold frozen papaya popsicle sticks. It feels cold and smooth in your mouth and it is wonderful for your small kids and your big kids or who ever would love to have a cold tasty treat.
Preparation time: 10 minutes
Mixing Time: 5 minutes

Ingredients:
1 2lbs papaya pealed and deseeded cut into ½ slices
Agave/Sugar to taste
1 quart water
3 oz cups/popsicle molds
Directions:
Place the papaya, agave/sugar and water in a blender blend everything for around 5-7 minutes then place the bend into cups or popsicle molds place the sticks on top and freeze for about 4-7 hours. And enjoy!

Karla’s Tres Leches
When it come to desserts my sister-in-law is a wiz at it. She prepares the most delicious cakes ever. Every time she prepares any cake for parties everyone wants more. She is always asked to prepare this fabulous Tres Leches for every family gathering. Everyone who taste this
Tres Leches Cake will surly come back for more.
Preparation time: 10 minutes
Cooking time: 20 minutes
Money Savings: $12.00
Approximate calories per serving: 290
Ingredients:
2 cup pancake mix
1 cup milk
4 eggs
1 cup sugar
1 tubular cake pan greased
1 can evaporated milk
1 can condensed milk
Turkey baster
Directions:
Place the pancake mix, milk, eggs and sugar in a mixing bowl; mix all together. Place the mixture in the greased tubular pan.
Turn heat to 350 and place in the oven for about 25 minutes.
Let cool (completely).
In a mixing bowl mix evaporated milk and condensed milk.
Do not remove the pan from cake. Insert the mixture of milks into turkey baster into the cake inserting the holes into the bottom of the cake. Once all the milk mixture is in the cake place the cake facing down into a serving plate. Let the cake sit there until the cake soak all the milk in. Then it’ll be easier to release the pan out.

Pineapple Pudding
You might love dessert as much as I do. But you don’t want the extra calories. You will love this pineapple pudding. This is a wonderful dessert with less calories, it is made from scratch, and
with the most natural ingredients but best of all it is easily prepared. This is a recipe my mom would prepare for us when we were young. It is made from real pineapple peelings and cornstarch. I’m sure your kids will love it as much as we did.

Ingredients:
The peel of 1 pineapple was pineapple
1 quart water
2 stick of cinnamon (optional)
1.6 oz corn starch
½ cup sugar
Directions:
Place pineapple peels on a medium cooking pot with water. Place 1 stick of cinnamon (optional). Place pot on medium heat let it boil for about 10-15 minutes. Take a coarse strainer and strain into another pot place that pot into medium heat pour the corn starch into the pineapple water quickly with a spoon mix well until water becomes thicken pour sugar and continue mixing. Pour into small dishes and into the refrigerator for about 4-5 hours or the next day. Until its has thicken.

Piña Colada Cupcakes
If you want to say I love you to the one you love. What a better way to say it by giving him/her a yummy piña colada cupcake. Start with a box of pineapple cake mix and instead of water I used coconut milk.
Mmmm!!! Piña colada cup cakes delicious and they are very simple to prepare.
Serving Size: 24
Preparation Time: 20 minutes
Cooking Time: 20 minutes

Approximate calories per serving: 85
Ingredients:
1 box pineapple cake mix
1 1/3 cups of coconut milk
3 eggs
1/3 cup oil
For Toping:
1 cup of heavy cream
1 tsp vanilla extract
¼ cup sugar
1/3 cup of coconut shavings
Directions:
Follow the directions in the back of cake mix box but instead of water you replace it with coconut milk. Pour it in each muffin cup evenly.
Prep oven to 350
Place the pan in the oven of about 18-20 minutes or until inserting it with a toothpick and it comes out clean. Once they are ready. Take them out to cool of about 10-30 minutes.
Mean time prepare the topping:
Mix together heavy cream, vanilla extract, sugar and coconut shavings. Until thicken.
Then spread the topping on top of each cupcake. You can decorate the cupcake however you like.

Sweet Heart Creamy Cake
If you want to impress your sweet heart you can do it with this wonderful dessert. This is easy to prepare and it is low in fat and sugar. This great tasting cake is prepared with fluffy sponge cake and red fresh delicious strawberry filling. The powder sugar in this dessert makes it look like snow flacks. This lovers creamy cake heaven in your mouth.

Ingredients:
1 box of sponge cake mix
6 cups of fresh strawberries washed and cut in half
¼ cup of powder sugar
Heart shape baking pan measured across 12”
Whip Cream:
1 cup of heavy cream
1 tsp vanilla extract
¼ cup sugar
Directions:
Prepare sponge cake as instructed in the package.
Let cool.
Prepare the whip cream:
On a large bowl pour heavy cream, vanilla extract and sugar. Mix it until thicken.
Cut cake horizontal spread whip cream over bottom layer of the cake. Arrange the strawberries over the whip cream (save some of the strawberries for top garnish). Place top layer of the cake and garnish with remaining strawberries. Dust with powder sugar.

Tres Leches
This is a wonderful easy dessert for the holidays or for any special occasion. It is prepared with cake batter, and three milks. Whole milk, condensed milk, and evaporated milk. I have modified it instead of whole milk, use skim milk. Instead of regular condensed milk, use fat free. Instead of regular evaporated milk, use fat free. Instead of the regular sugar, use substitute sugar. It is a little less calories and healthier. If you bring this to your next Christmas party it’ll surely be a hit.
Serving Size: 18-24
Preparation Time: 20 minutes
Cooking time: 30 minutes

Ingredients:
1 box of white cake mix- fallow the directions for backing 9” X 13” cake. Then fallow the three milk and the whipp topping direction
Or Want to bake your own:
½ cup of butter/margarine
1 cup sugar/substitute
4 eggs
½ tsp vanilla extract
1 ½ cup of all purpose flour
1 tbsp backing powder
Three Milks:
2 cups skin milk
1 can 14oz fat free condensed milk
1 can 12oz fat free evaporated milk
Preparing the whip cream topping:
1 ½ cups heavy cream
1 cup sugar/substitute
1 tsp vanilla extract
12 Maraschino cherries
Cinnamon Powder
Directions:
With an electrical mixer mix together butter, eggs, vanilla extract until it is fluffy. Set aside.
Mix flower, baking powder into the fluffy mixture. Pour batter into a buttered 9” X 13” baking pan. Bake at 350 for about 20-30 minutes or until ready. Late cake cool. Mean while mix together the three milks. once it is cooled poke the entire cake with a meat fork creating holes all over the cake. Pour the mixture of the three milks over the cake until its soaks.
Directions for Whip topping:
Whip whipping cream, sugar and vanilla extract until thicken. Spread over cake, place cherries on top of the cake and sprinkle cinnamon.
Tips:
If you want to make it more festive instead of the cinnamon you can use red and green sugar crystals.

Apple Pie
Apple pie and turkey on thanksgiving day is a must. There is nothing like coming home to a warm apple pie on the table on thanksgiving day. You might like it with whipped cream or with ice cream or both. Either way, it’s a special dessert after having that wonderful turkey meal.
Serving size: 6-8
Preparation time: 25 minutes
Cooking time: 35 minutes

Ingredients:
Frozen pie crust
9” round Pie dish
5 good size granny smith apples pealed and cut in ½” thick wedges
1 tbsp lemon juice
½ cup white sugar
½ cup brown sugar
1/3 tsp salt
3 tbsp flower
½ tsp cinnamon powder
½ tsp ground nutmeg
2 tbsp melted butter
Directions:
Unroll and place one of the ready made pie crust dough piece on a pie dish if excess: crust cut it in order for it to be in line of the dish folding the edge. On a bowl place the apples, lemon juice, both sugars, salt, flower, cinnamon powder, and ground nutmeg mix well. Place the mixture on top of the crust. Unroll the other piece of pie crust dough and place it on top. Trim the edge, and fold the edge. With a knife slice four steam vents. With a brush cooking brush, brush in the butter on top of the pie crust. Bake on 425 for 45 minutes or until crust is brown.

Budding de Pan (Bread Pudding)
This is one of my family’s favorite dessert. In one occasion my daughter asked me to make this amazing cake for her birthday. When anyone taste this wonderful tasting bread pudding they absolutely love it and they are always asking me when I’m going to prepare it again. People has asked me to prepare it for them for special occasions. I got this recipe from my mother and people who know my mother and had taste her cooking had told me that I prepare this dessert better than my mother. Even though, I prepare it with whole wheat bread, low fat milk and fat free condensed milk it taste delicious and is healthy for those of you who are watching your figure. The taste is the same or even better as preparing it with white bread, whole milk, and regular condensed milk.
Serving Size: 18
Preparation time: 30 minutes
Cooking time: 1 hour

Ingredients:
½ gallon milk
3 ½ butter sticks
1 loaf sliced bread
1/3 cup of cinnamon powder
2 tbsp vanilla extract
1 tbsp of backing powder
2 ½ cups sugar
1 can of condensed milk
Directions:
On a medium cooking pot place the milk, and the 3 butter sticks on medium heat. When the milk starts to get warm enough for the butter to beginning to melt place the bread on the milk. Turn off the heat off. With your hands mush the bread the until every particle of the bread is dissolve. Mix in cinnamon, vanilla extract, backing powder, sugar and half of can of condensed milk on top of the bread.
Backing:
Spread the reaming butter on a backing pan all over to cover the entire pan. Heat oven to 400. Pour the bread mixture in the pan. Place the pan inside the oven for about 1 hour or until the top gets brown or if you poke it with a toothpick and it come out clean. When it is done or almost done pour the remaining condensed milk on top of the cake try to do this evenly so that it could all be spread evenly. Leave in oven for about 5-10 more minutes. Turn down the oven to off leave it in there until it starts to cool off. Once it fully cooled you can eat it. You can not have it while its hot because its to watery; it will be messy.
TIP:
If you like you can use whole wheat bread, low fat milk, low fat condensed milk, artificial sweeteners. It taste exactly the same. Enjoy!

Arroz en Leche (Rice Pudding)
This delicious desert is an old tradition in most Spanish household. Have it cold or hot it doesn’t matter it your choice, your taste, it is still exquisite. Since, this is my husbands absolute favorite desert I took my mother-in-laws recipe and my mom’s recipe and combined them to make one. Very good, very tasteful, Mmmm! DELICIOSO!
Serving Size: 6-8
Preparation Time: 5 minutes
Cooking Time: 1 hour

Ingredients:
3 ½ cups of water
3 tiny slices of lemon peal
3 cinnamon sticks
2 cups of rice
2 cups of sugar
½ gallon of milk
1 14oz can of sweet condensed milk
Ground Cinnamon to taste
Directions:
In a large cooking pot on medium heat boil the water with cinnamon sticks and the lemon peal.
After water boils pour the rice let the rice boil until the rice is soft if you need to add a little bit more water so that the rice cooks correctly go ahead.
Once the rice has been cooked pour in the sugar stirring it a bit so that the rice doesn’t stick. At this moment the water should have consumed a little so pour in the milk. Keep on stirring. Then pour in the condensed milk. Stir for a couple of minutes then it is ready to eat. If you like it hot!
Tips:
If you rather prepare this with less calories and fat you can use skim milk, skim sweetened condensed milk.
You can also prepare it with brown rice but it takes longer cooking time, because brown rice is a little harder so it will take more time to soften.

Coconut Ice Pops
These ice pops has been a hit within my family. These are a great summer sensation. What I love about these coconut ice pops is that they remind me of my carefree childhood life and for a few cents I would go to the neighbors house where she had her own little pulperia (small local store) and I would buy (paletas de coco Coconut ice pops). This summer sensation is not only refreshing, but they taste magnificent. The rich taste of tropical coconut and the fine taste of cinnamon is awesome when it hits your tongue.

2 cups of water
2 cinnamon sticks1/4 cup of milk

Tips:
Remember in any frozen desserts it should be a bit more sweet then your usual.

Tutti Frutti
It is funny how memory comes in different forms. For example, food or meals bring nostalgia to me. Especially this perfect dessert brings back so many memories. Just seeing the gelatin, with the Frozen vanilla Yogurt, and the fruit cocktail. Takes me back when I was a little girl back in my county and my mom took me and my brother to a little booth right by the beach and would buy us what ever dessert we wanted and I remember always asking for this sweet refreshing tutti frutti. It was prepared with gelatin, vanilla ice cream, and fruit cocktail. Now, I recreated that same feeling but instead of ice ream I used Frozen yogurt and instead of the regular gelatin I used sugar-free gelatin and let me tell you; it taste as magnificent as the real thing.

1/2 watermelon seeds removed/seedless and diced
1 cantaloupe, seeds removed and diced
1 quart fresh strawberries, hulled and sliced
2 cups seedless red grapes
1 pineapple, peeled, cored and diced
1 papaya seeds removed and diced
Directions
In a large bowl, combine watermelon, cantaloupe, strawberries, grapes, pineapple, and papaya. For a more elegant presentation, all melons (cantaloupe) can be cut into balls using a Melon Ballers, and the rest of the fruit can be arranged on a platter instead of in a bowl. It does not need extra juices, the juices come from with in the fruit.
TIPS:
To make sure fruits are ripe and sweet you need to make sure that the watermelon is hollow, (you knock on the watermelon if it sound hollow then it is ready). The cantaloupes is yellow and like an avocado make sure it is soft on both ends. The strawberries need to be extremely red. Grapes need to be very sweet as well. Pineapple should be very yellow. The Papaya should be very orangey-red.
