Cheesy Chicken Breast Fillet


I’m always looking for creative ways to jazz up chicken.  I came up with this easy and amazing tasting cheesy chicken breast filets. This a healthy chicken dish ready in no time and taste divine over broccoli-cheddar rice.

Serving Size: 4
Preparation time: 15 minutes
Cooking Time: 25 minutes

Ingredients:
2 boneless chicken breast cut in half horizontally
Complete seasoning
Garlic powder
½ cup of bread crumbs with imported Romano cheese
½ cup grated parmesan cheese

Directions:
Take chicken sprinkle complete seasoning and garlic powder to taste. In a bowl place bread crumbs and parmesan cheese mix well. Fill each piece of chicken with the mixture place each piece of chicken in a backing pan heat the oven on 375-400 for about 20 minutes or until juices run clear.

Kielbasa sausage & Alfredo Sauce


This is quite an easy and delightful pasta dish.  This is a great dish for busy, working moms.  Or when you are just to tire and need to get diner on the table quickly.  The kielbasa sausage give the sauce such a unique, and particular flavor.   You can prepare your own Alfredo sauce or you can use the jar one.  Either way, it is an spectacular dish.  

Serving Size: 4
Preparation time: 10 minutes 
Cooking time: 20 minutes

Ingredients:
1 16 oz  package Kielbasa sausage cut into ½ inch slices
1 1/2 jar of Alfredo Sauce


Ingredients for prepping you own sauce:
¼ cup of water
1 ½  cups heavy cream 
2 garlic cloves crushed 
2 ½ cups of parmesan cheese
Complete Seasoning
3 tbsp parsley flakes 


Directions:
On medium heat, on a medium cooking pot, bring water to a boil place the pasta in the water.  Let that boil some more until the pasta is soft.
While that is pasta is cooking you can be preparing the sausage.
On a medium skillet on medium heat place the sausage let them fry (with no oil) the sausage with give out its own oil.  Flip it once until they’re nice and browned. Turn the heat into low
Pour the sauce over the sausage, sprinkle complete seasoning.
Drain most of the water out of the pasta and on low heat place it back on the stove. Pour in the sausage and sauce mixture into the pasta mix it well and you are all ready to eat.   

Directions for prepping the sauce:
In a pan over medium-low heat melt the butter. 
Once the butter is melted add the creamer to simmer add garlic, cheese, complete seasoning and parsley.  Whisk it quickly over heat.  Until thicken.

Eggplant Parmesan

This is another Italian classic. Eggplant parmesan is an ultimate meal with tender pieces of eggplant, a thick tomato sauce and lots of parmesan cheese on top. Yummy!!

I learned to prepare this traditional Italian dish when my friend who grew them in her garden gave me about five giant eggplants. At first I did know what to do with them. Then she gave me this wonderful recipe and I tried it. I fell in love with this delicious meal.

Serving Size: 6
Preparation time: 40 minutes
Cooking time: 25 minutes

Ingredients:
2 medium size eggplants or 1 large wash and peeled
Salt
2 eggs beaten
2 cups of bread crumbs
6 tbsp of oil
42 oz Spaghetti Sauce
1 cup of mozzarella cheese
1 cup parmesan cheese

Directions:
To Cure the eggplant: Sprinkle salt in every piece of eggplant all over the eggplant and leave for 30 minutes.(you’ll see the eggplant become soft). Wash the salt off and pad try with a paper towel.

Turn oven on to 350 F.

Dip each eggplant piece on the egg and then in the crumbs.
On medium heat pour oil on a frying pan then place the eggplant on the oil frying them on each side until brown.

Place each piece of eggplant in a 9X13 inch baking pan spread it layers. Place a layer of spaghetti sauce over the eggplant. Then place the layer of mozzarella cheese and parmesan cheese then place another layer of eggplant and another of spaghetti sauce, then another layer of the cheeses. Put it in the oven for 20-25 minutes. Or until the cheese is melted.

Chicken Piccata

This dish is an Italian classic yet another great chicken dish. I figure why pay good money to restaurants when I can prepare it myself. This is an awesome dish that goes well with angel hair spaghetti. I love the flavorsome sauce and the unique taste of the capers makes this a wonderful dish.

Serving Size: 4
Preparation Time: 20 minutes
Cooking Time: 15 minutes

Ingredients:
4 thin Slices of chicken breasts
Complete Seasoning
Mrs. Dash Seasoning Blend
½ cup flour
2 tbsp butter
3 tbsp olive oil
1 chicken flavor bouillon cubes
1 cup of water
Juice of 2 lemons
1/3 cup white wine
1/3 cup capers (rinsed)
1/3 cup parsley

Directions:
With a meat pounder pound the chicken flat.
Sprinkle complete seasoning, and Mrs. Dash Seasoning Blend on the chicken breast.
Cover the chicken breasts completely with flour.
Place a skillet on medium heat with and oil butter let the butter melt. Place each chicken piece on the skillet letting them brown on both sides.
While the chicken is cooking: on a small cooking pot bring the water, the bouillon, the lemon juice to a boil making sure the bouillon has well dissolved.
Once the chicken is well fried on both sides bring the heat to low pour in the water mixture and the wine on top of the chicken. Remove the chicken from pan. Place the capers on the pan sauté for about five minutes. When serving place the chicken on the dish and on top of the chicken pour the sauce with capers then garnish with the parsley

Salmon Francese

I wanted to feature this wonderful Salmon recipe even though it’s the same recipe as the Chicken Francese.
This is such a delicious dish I just didn’t want to leave it out. The Francese sauce really adds zest to this delectable fish dish. This spectacular fish goes well with brown rice, a side of bok choy or spinach. It could also go well with Alfredo Fettuccine. Your family would absolutely love it.

Serving size: 4-6
Preparation time: 15 minutes
Cooking Time: 20 Minutes

Ingredients:
4 Salon filets
Complete Seasoning
Mrs. Dash Seasoning Blend
½ cup flour
2 tbsp butter
1 chicken flavor bouillon cubes
1 cup of water
Juice of 1½ lemon

Directions:
Sprinkle complete seasoning, and Mrs. Dash Seasoning Blend on the salon.
Cover the salmon completely with flour.
Place a skillet on medium heat with butter let the butter melt. Place the salmon on top of the melted butter fry on both side.
While the salmon is frying: on a small cooking pot bring the water, the bouillon, the lemon juice to a boil making sure the bouillon has well dissolved.
Once the chicken is well fried on both sides bring the heat to low pour in the water mixture on top of the chicken for about five minutes or until the water mixture is glazy.

Chicken Marsala

I fell in love with this dish a couple of years ago. When I had it in an Italian restaurant. In order to save some money I’ve tried to prepare it several time, but now I could prepare it to perfection. This is a perfect Italian dish in which goes good with angel hair spaghetti, or a vegetables like steam asparagus, or brown rice. It is prepared with two different kinds of wines and mushrooms which give it a beautiful sauce which adds that distinct taste to the chicken.

Preparation Time: 10 minutes
Cooking Time: 25 minutes

Ingredients:
4 boneless chicken breast halves
Adobo
Garlic powder
½ cup flour
2 tbsp olive oil
1 lbs mushrooms wash, cut into slices
¼ cup sherry wine
½ cup Marsala wine

Directions:
Take chicken breast and pound them until they are about ¼ inch thick. Then you sprinkle adobo, and garlic powder on the chicken. Place the flower on a flat plate place each chicken on top of the flour covering each piece of chicken completely. Place a skillet on medium heat. Pour the oil on the skillet. Place each chicken breast on the skillet making sure that both side are browed. Place the mushrooms on top of the chicken. Then pour bouth wine on top bring down the heat to low cover let it simmer for a couple of minutes. As soon as it starts to boil turn it off. And it will be ready to serve.

Chicken Parmesan

It doesn’t have to be Friday, or Wednesday or any day of the week. When ever it is traditional Italian night in your household. It doesn’t matter, but when you are craving an easy, but awesome satisfying meal. This Chicken parmesan is most likely to fulfill your appetite.

Serving Size: 4

Cooking Time: 35 minutes

Preparation Time: 30 minutes
Money Savings: $12.00
Approximate calories per serving: 270

Ingredients:
4 boneless chicken breast thinly sliced
Italian seasoning
Complete Seasoning
Garlic powder
¼ bread crumbs
4 tbsp of butter
20 oz of Italian sauce
1 cup of parmesan cheese
Directions:
Sprinkle Italian seasoning, complete seasoning and garlic powder on the chicken. Then place bread crumbs on a separate flat dish and take the chicken and dip it into the bread crumbs fill the entire breast with the bread crumbs.

On a skillet on medium heat place the butter until it melts. Then place the chicken on the skillet until brown on both sides.

Take a flat backing dish and place the chicken on it. Then take the sauce and spread it on each chicken piece. Then do the same with the cheese and place it in the oven on 400 for about 15 minutes or until cheese is melted.

Tips:
You can serve this with my amazing Penne alla vodka or a green salad.

Penne Alla Vodka

I first tasted penne alla vodka in a little Italian restaurant in my home town. I absolutely loved it. Now I prepare my own penne alla vodka. The vodka and the bacon enhances the flavor and gives out a tastier taste to this beautiful pink, creamy sauce. Just add plenty of parmesan cheese and eat it away. Yummmy!!!

Serving Size: 4-6
Preparation time: 15 minutes
Cooking time: 40 minutes

Ingredients:
4 slices of bacon cut into 1 inch pieces
½ medium onion diced
3 cloves of garlic
½ cut red pepper
Parsley
Garlic powder to taste
Italian seasoning to taste
Rosemary to taste
12 basil leaves
¼ vodka
1 28oz can of tomatoes crushed
½ heavy cream
1 box of penne pasta
parmesan cheese

Directions:
On a large pan cook the bacon over medium heat until browned wait for about 5 minutes or its cooled transfer into a blender, blend together with onion, garlic, pepper, parsley, garlic powder, Italian seasoning, rosemary, basil leaves, vodka, tomatoes crushed and heavy cream. After all that is very well blended. on the same large pan that you had cooked the bacon pour in the blended mixture and let it cook on low heat for about 20 minutes.
Cook the pasta according to package. Drain pasta and combine the sauce with the pasta. Serve and sprinkle parmesan cheese.
