Beef Shish Kobob

Beef shish kobobs are fabulous to prepare for you next BBQ party. They are not only great tasting but they are quick and easy to prepare. This is my husband’s recipe, he loves to prepare these full-flavored, meaty, and tender kobos. When you bite into a peace of meat you can actually savor all those condiments in your mouth. It is a divine experience.

Serving Size: 4
Preparation time: 10 minutes
Cooking time: 30 minutes

Ingredients:
2 ½ lbs beef lion meat steak cut in cubes
Complete Seasoning
Garlic powder
4 tsp Italian salad dressing
2 medium red onions cut in 4th
16 oz mushrooms
3 plum tomatoes cut in 4thKobob sticks

Directions:
Sprinkle complete seasoning, and garlic power. Then pour in the Italian dressing. Set aside for ½ hour.
Place onion, mushrooms, and tomatoes on grill plate. Place meat on the grill. Grill on medium heat. Once is cooked to your liking place the meat on the sticks. Placing one piece of meat, then piece of onion, then a piece of tomatoes, then a piece of much room…and cont.

Country Style Ribs

These grilled country Style Ribs are not only easy to prepare but great tasting.
They are my family’s all time favorite pork dishes.

They are very flavorful and tender. They have just the right amount of seasoning; If cooked correctly the meat will fall of the bone. When cooking it you can smell all those savory flavors. It makes my mouth watery.


Serving Size: 4
Preparation Time: 5 minutes
Cooking Time: 45 minutes
Money Savings: $8.50

Approximate calories per serving: 490

Ingredients
4-5 lbs. of county style ribs bone-in
Adobo to taste
Complete seasoning to taste
Garlic powder to taste
4 tsp. Mojo Criojo

Directions:
Sprinkle adobo, complete seasoning, garlic powder and mojo criojo. Let marinade for 15-30 minutes
Grilled - on low heat for 20-30 minutes depending on the grill or until tender.
Baked - on 400 for about 30-45 minutes.
 
Tips:
You may want to accompany this dish with my simple salad, or my brown rice and glandules.

Turkey Mushrooms & Swiss Burger

 

If you need to prepare burgers; why not a turkey burger? Better yet, turkey mushroom & Swiss burger. It is defiantly a healthier option, and delicious not so greasy as the beef burger. The Swiss cheese along with the mushrooms makes this an awesome, juicy and great tasting burger.

Serving size 4
Preparation Time: 15 minutes
Cooking Time: 15 minutes

To double serving size just double ingredients
To reduce size just reduce the ingredients

Ingredients:
1 lbs ground turkey
Dash of salt
Dash of pepper
3 tsp soy sauce

Swiss Cheese
1 head of Romine Lettuce
1 small tomatoes sliced

For Mushroom Sauce
2 cans of sliced Mushrooms

2 tsp soy sauce4 tsp duck sauce
 
Directions:
Place the ground turkey on a bowl mix in the salt, peppers and sosoy sauce. Make the patties about ½ inch thick. Place on the grill or on a George Forman Grill for about 3 minutes or until cooked. Take them out .

Directions to prepare Mushroom sauce
Take a small sauce pan, pour in the mushrooms, soy sauce, and duck sauce. Let it simmer on low heat until it thickens.

Place the lettuce on whole grain sandwich rounds, place the a slice of tomatoes the lettuce, place the Patty on top of the tomatoes. Place the Swiss cheese on top of the patty, the mushroom sauce on top of the Swiss cheese and the top of the sandwich round on top of everything.

Tips:
You can accompany this with a bag of sweet potato fries all you need to do is place it in the oven for about 15 minutes on 400 And you have a great meal.

Rib Eye with Mushroom Sauce

This very juicy Rib Eye Stake with Mushroom Sauce is definitely a favorite of mine. What I love most about this stake?
It is loaded with flavors and remains tender while cooking. The smooth texture of the mushrooms and the sweet and sour taste of the sauce make every bite a delight to your mouth. When taking that first bite just close your eyes and enjoy it. Yuuuuumiiii! 

Serving Size: 4
Preparation time: 5 minutes
Cooking Time: 20 minutes

To reduce size just reduce the ingredients

Ingredients:
4 6-8oz Rib Eye Stakes
Complete Seasoning
Garlic powder
4 Tsp. Italian Salad Dressing
Stake Seasoning

For Sauce
2 Tsp. Olive Oil /Italian Salad Dressing
16 oz Baby bella Mushrooms sliced
4 tsp of soy sauce
6 tsp of duck/sweet and sour sauce

Directions:
Take the stakes sprinkle Complete Seasoning, Garlic powder, pour in the salad dressing then rub in stake seasoning let it marinade for a couple of hours.
Grill the stakes on medium heat to your taste either well, medium well, medium rare, rare, or medium.

Sauce Directions:
On low to medium heat in a skillet pour in the olive oil or Italian Salad Dressing. Place the mushrooms stir them for once or twice. Then add soy sauce and duck sauce or sweet and sour sauce. Stir once or twice then cover heat on low, let it simmer until sauce thickens a bit.

Pollo al Horno (Baked Chicken)




In Spanish Pollo al Horno which means baked chicken. This finger licking broiled or grilled chicken is one of my family’s favorite. It is very nutritious because it's cooked in the oven or on the grill. It is simple and economical to prepare. I used leg quarters and cut them in half, but you can use chicken thighs, legs, and wings it’s your choice. I trimed off the excess fat and if you want you can even take the skin off if you are really looking out for a slim meal. You can season it and let marinate for ½ hour, but if you let it marinate for longer time; the chicken turns out juicy and moist. You can serve it with brown rice or green salad and this will be a wonderful chicken meal for you and your family.
Serving size: 4
Preparation Time: 10 minutes
Cooking time: 55 minutes

To reduce size just reduce the ingredients

Ingredients:
4 leg quarters cut in half
Adobo
Complete Seasoning
Garlic Powder
2 oz Mojo Criollo

Directions:
Season chicken with adobo, complete seasoning, garlic powder then you can add the Mojo. Rub in and mix all the ingredients together on the chicken, let marinate for a 20 minutes or overnight if you prefer. Grill or Bake the chicken until cooked
Bake :
To bake place the chicken in a 9 X 13” baking pan and turn on the stove on to 350 for 55 minutes or until cooked
Grill :
Place the chicken on the grill on low, but be careful not to burn the chicken.

Tips:
You can buy the ingredients in a Spanish store or in the Spanish isle in the supermarket.
