When I notice my kids would leave my house with out having a good breakfast when they were off to school. This is quick and easy to prepare with the protein they need for the day. Remember breakfast is the most important meal of the day and why not make it fun, easy, gratifying and nutritious.

Ingredients:
4 waffles
4 fully cooked Sausage patties cut into triangle divided
4 eggs (white if you like) scramble divided
1/3 cup Shredded Cheddar cheese
Directions:
Place waffles on toaster for lightly toasted.
Place a small frying pan on medium heat. Place the ½ of the sausage on the frying pan until the oil begins to come out. Place the ½ of the eggs on the pan then place the cheese. Take a spatchula start folding the egg into a triangle. Place the egg on top of one of the waffles and place the other waffle on top of it.

Pastrami, Eggs and Cheese Sandwich
This sandwich is a delicious way to start your day or end it. It doesn’t matter when you decide to have it breakfast, lunch or dinner it taste marvelous either way. A delight to your palate with plenty of pastrami, eggs white, stringy mozzarella cheese on sour dough bread. If you prefer you can certainly add lettuce and juicy plum tomatoes or sundry tomatoes. Just add a touch of mayo, ketchup and mustard and this would just perfect.
Serving size 1
Preparation time: 3 minutes
Cooking time: 5 minutes

Ingredients:
2 slices of bread
1 tsp of mayonnaise
1 tsp of ketchup
1/3 lbs of pastrami
1 tsp of mustard
2 slices of mozzarella cheese
1 tbsp of butter or oil
2 eggs white
Directions:
On both slices of bread spread mayonnaise and ketchup on them. Place the pastrami on both sides of each bread evenly. Spread mustard on both sides of the pastrami. Place the cheese on the top part of the sandwich. Place both sides of the bread on a taster oven until the cheese starts to melt.
Cooking the eggs:
Place the two egg white on a small bowl and scramble it. Place the butter on a small frying pan on medium heat. Place the scramble eggs on the frying pan. Once its starts to cook try to flip one side at a time in order for the egg be long to the shape of the bread, Place the eggs on top of the cheese and pastrami, put the sandwich together. Your are ready to taste the delight.

Huevos Rancheros (Ranchers Eggs)
Eggs are my husbands favorite breakfast dish. But huevos rancheros are his one and only favorite. These wonderful pouch eggs with red delicious salsa on top warm flower tortilla under it. This surely is the ultimate breakfast fit for a king.
Serving Size: 4
Preparation time: 8 minutes
Cooking Time: 20 minutes
Money Savings: $2.00
Approximate calories per serving: 410
Ingredients:
2 tbsp oil
1 small chopped green pepper
1 small chopped onion
1/3 cup of cilantro
1/3 cup salsa or pasta sauce
1/3 cup of water
4 eggs
2 tbsp butter
4 tortillasAvocado sliced
Directions:
Place oil in a large plan on medium heat. Place the pepper, onion and cilantro.
In a cup mix the salsa or the sauce and the water together. Place the mixture into the pan.
Place the eggs on top of the sauce in the pan. Making sure all eggs are separate from each other. Cover and simmer until eggs are cooked.
Place butter in small pan on medium heat. Make sure the entire surface of the pan is filled with hot butter. Place the tortilla on top of the butter let it fry on both sides when the torilla starts to bubble then you flip it over do the same to the other side. The tortilla should be soft. Make sure the tortilla is not tosted.
Tip:
You can make your own salsa by putting the green pepper, onion, cilantro and 5 plum tomatoes with 1/3 cup of water into the blender.

Whole Wheat French Toast
Whole wheat French Toast is a great way to start your morning. These French toast slices have a fabulous taste although healthy because they are made from whole wheat bread and egg whites. We like to top it with syrup and fresh strawberries.
Serving Size: 6
Preparation time: 10 minutes
Cooking Time: 30 minutes
Money Savings: $7.00
Ingredients:
12 eggs white
4 tbsp cinnamon
¼ cups of skim milk
1 cup of sugar
1 loaf French Whole Wheat Bread cut in 1 ½ inc thick
5 tbsp of butter/margarine
16 oz of strawberries cut in slices
Syrup to taste
Directions:
Place eggs white, cinnamon, milk, and sugar in a bowl mix thoroughly.
Soak the bread in the mixture.
Meanwhile, place a flat pan/pancake pan on medium heat with 1 tbsp of butter.
Once the bread pieces are well soaked take four/five pieces place on the hot pan let it fry for 2 minutes. Flip over let the other side fry for 2 minutes and bring out.
Do the same frying process for all of the pieces. Place 3 or 4 pieces in a plate and place the 6/7 slices of strawberries on top of the toast and place syrup on top of it.

Rye bread, eggs, tomatoes, and cheese
This very attractive plate with Rye bread, eggs, tomatoes, and Sharp cheddar cheese is a real meal in one. It is quick and easy and most of all delicious.

1 tsp of olive oil
Rye Bread
Eggs
Tomatoes sliced
Sharp cheddar cheese
Directions:
On medium heat fry the two eggs in the oil cover the it up for about 1 minute or until yokes are covered in white. (Cook them over easy) Then place the eggs on top of the bread, then place the two slices of tomatoes on top of the eggs, place the cheese on top of everything.
Tips:
This is also great with mozzarella cheese, and crumbled feta cheese.
