Yogurt and Fruit Popsicle


This is a great, healthy and delicious snack when your kids come home from school.
This recipe is easy to prepare and all who taste it will love it.  All it take is plain yogurt some kind of sweeteners, for example sugar, agave or honey if you want, and fresh fruits.  I loved to make treats for my kids when they where younger.  This is also a wonderful treat for kids birthdays and kids gatherings. This is in all a fine treat.

Serving Size: 16 popsicles
Preparation Time: 5 minutes
Freezer Time: 8 hours
Money Savings: $10-$12.00
Approximate calories per serving: 30

Ingredients:
32 oz plain yogurt
Sugar/honey/agave to taste
2 fresh kiwis
¼ cup blue berries
1 small banana sliced
¼ cup fresh strawberries sliced
Popsicle molds  

Directions:
Place the yogurt in the a bowl mix sweetener.
Place pieces of the fruits in the mold then pour the yogurt into the molds.
Can alternate and pour yogurt into the mold to fill it have way then place pieces of fruits on it.
Then freeze them for about 8 hours and they are ready to devour

Tips:
If you would like you can puree the fruit and mix it in with the yogurt it also tastes delicious.

Healthy Papaya Smoothie


I don’t know why, but I believe that papayas are in season at least by my neck of the woods, because papayas are less expensive now than at any other time.  Papayas have antioxidants besides when very ripe they are very sweet and tasteful.  Ether way it is wonderful to enjoy a delicious papaya shake.  All you need is milk, a very ripe papaya and some kind of sweetener, (a touch of cinnamon) and waa la! Enjoy.  It is easy to prepare and delightful in taste.

Serving Size: 4
Preparation Time: 5 minutes

Approximate calories per servings: 343 on a 10oz glass

Ingredients:
1 ½ cup of papaya
16oz (skim)milk
Sweeten to your taste
2 tbs. ground flax seed
16 ice cubes
Pinch cinnamon powder


Preparation:
Blend together papaya, milk, sugar, and flax seed. Then pour into a glass place 4 ice cubes and cinnamon.

Tip:
You can take agave instead of sugar or artificial sweetener.

Frozen Papaya Popsicle Sticks


You want to taste something smooth, refreshing on a hot summer day you may want to do it with a great tasting home made cold frozen papaya popsicle sticks. It feels cold and smooth in your mouth and it is wonderful for your small kids and your big kids or who ever would love to have a cold tasty treat.


Preparation time: 10 minutes
Mixing Time: 5 minutes

Approximate calories per serving: 8

Ingredients:
1 2lbs papaya pealed and deseeded cut into ½ slices
Agave/Sugar to taste
1 quart water
3 oz cups/popsicle molds

Directions:
Place the papaya, agave/sugar and water in a blender blend everything for around 5-7 minutes then place the bend into cups or popsicle molds place the sticks on top and freeze for about 4-7 hours.  And enjoy!

Pineapple Pudding


You might love dessert as much as I do. But you don’t want the extra calories.  You will love this pineapple pudding. This is a wonderful dessert with   less calories, it is made from scratch, and
with the most natural ingredients but best of all it is easily prepared.  This is a recipe my mom would prepare for us when we were young. It is made from real pineapple peelings and cornstarch.  I’m sure your kids will love it as much as we did.

Serving Size: 8
Preparation time: 15 minutes
Cooking time: 45 minutes

Ingredients:
The peel of 1 pineapple was pineapple
1 quart water
2 stick of cinnamon (optional)
1.6 oz corn starch
½  cup sugar

Directions:
Place pineapple peels on a medium cooking pot with water.  Place 1 stick of cinnamon (optional). Place pot on medium heat let it boil for about 10-15 minutes.  Take a coarse strainer and strain into another pot place that pot into medium heat pour the corn starch into the pineapple water quickly with a spoon mix well until water becomes thicken pour sugar and continue mixing. Pour into small dishes and into the refrigerator for about 4-5 hours or the next day.  Until its has thicken.

Pizza Wedge Bites

I first served these great tasting appetizer to my son and his friends. It was a great hit. I remember when I was younger and they would serve pizza wedges in school. I decided to prepare the same pizza wedge and just cut the loaf of bread sideways and prepare it exactly like the pizza wedge. This is how I created these pizza wedge bites. This is a great appetizer, or snacks for any occasion.

Serving Size: 4-5
Preparation time: 10 minutes
Cooking time: 5 minutes
Money savings: $7.00
Approximate calories per serving: 190 for serving of 4

Ingredients:
1 long bread Italian or French cut in ½ inch thick
1 cup of spaghetti sauce
1 bag of mozzarella cheese
11 slices of pepperoni

Directions:
Place the pieces of bread flat on a cookie sheet. On top of each piece of bread place about 1½ tablespoonful of sauce on top. Then take about 1½ tablespoonful of cheese and place that on top and then place the pepperoni on ½ of them not all so that they would have variety.

Tip:
If you like you can get 1 already cooked chicken breast or grilled chicken breast. Cut it up and place them on top of the bread.

Peanut Butter, Banana Apple in a Pita

This is a great tasting snack for the kids when coming home from school. When my kids were younger and they would come home from school looking for something to eat. I would serve them this healthy snack at least once a week. Peanut butter, bananas, apples in a pita bread; nutritious yet it would not spoil their appetite for diner. A no brainer snack I’m sure your kids will love.

Serving size: 2
Preparation time: 5 Minutes

Ingredients:
2 pita breads
1 medium size banana cut in slices
1 medium size apple cut in wedges
10 tbsp peanut butter

Directions:
Take the pita bread cut of the top of it. In its pocket place 4 slices of bananas covered with some peanut butter on it and do the same with the apples. Place remaining apples in the plate with peanut butter and watch the kids devour it.

Strawcheeckers


My daughter likes to experiment in the kitchen sometimes. She invented this good looking appetizer and called it Strawcheeckers. This great tasting whole wheat cracker smeared with cream cheese and a slice of strawberry on top is not only great tasting but it is also healthy. Not to many calories because it’s a whole wheat cracker. The cream cheese is also low calories. This could be a great appetizer or snack for everyone one to enjoy.


Preparation Time: 5 minutes

To double serving size just double ingredients
To reduce size just reduce the ingredients

Ingredients:
50 whole wheat crackers
17 Strawberries
8 oz cream cheese

Directions:
Very simple no-brainer. Take the whole wheat cracker spread it with cream cheese, then take a peace of strawberry and place it on top of the cheese.

Coconut Ice Pops

These ice pops has been a hit within my family. These are a great summer sensation. What I love about these coconut ice pops is that they remind me of my carefree childhood life and for a few cents I would go to the neighbors house where she had her own little pulperia (small local store) and I would buy (paletas de coco Coconut ice pops). This summer sensation is not only refreshing, but they taste magnificent. The rich taste of tropical coconut and the fine taste of cinnamon is awesome when it hits your tongue.

Serving Size: 20
Preparation time: 5 minutes
Cooking Time: 4 minutes
Freezer Time: 8 hours
Money savings: $9.00

Ingredients
2 cups of water
2 cinnamon sticks1/4 cup of milk
1 can coconut milk

1 can cream of coconut
1/3 cups of coconut flakes
3 oz plastic cups
Popsicle sticks

Directions
In a medium sauce pan boil on medium heat the water with the cinnamon sticks. Pour in the milk let it simmer, then add the coconut milk, cream of coconut and the coconut flakes. Let all that simmer.

Let it cool for about 1 hour.

Then pour the ingredients into the cups, put into freezer for 1/2 hour then put the sticks in let it freeze until frozen ready.


Tips:
Remember in any frozen desserts it should be a bit more sweet then your usual.

Pernil Wrap

Last night I prepared Pernil al Horno (Baked Pork Shoulder) Since I had leftovers I prepared pernil wraps for lunch. This again is delicious, and another no-brainer meal. The whole wheat tortilla, the lettuce and tomatoes are a healthy, and tasty lunch or snack.

Serving Size: 4-6
Preparation time: 5 minutes
Cooking Time 2 minutes
Money Saving: $6.00

Ingredients:
Whole Wheat Tortillas
1 head Romaine Lettuce washed and cut
2 tomatoes sliced
Shreded leftover pernil (pork shoulder)

In the microwave oven warm-up leftover Pernil for approximately two minutes then warm-up the tortilla for 30 seconds. Then lay the tortilla flat, place the lettuce the tomatoes and then the pernil then you wrap it.
Tip:
If you like you can add your favorite dressing or cheese for a better taste.

Spinach Hummus & Turkey Rap

Did you know that Hummus is made from chickpeas or garbanzo beans? As of-matter-of-fact Hummus is the Arabic name for Chickpeas, and garbanzo is the Spanish word for Chickpeas as well.
Hummus is the best alternative to mayonnaise. This spinach hummus and turkey Rap is a healthy, no-brainer easy snack or lunch. The phenomenal flavor of a whole wheat tortilla and the turkey ham and the earthy flavor of spinach hummus is joy to you palate. I’m positive to whom you’ll serve it to they will love it.

Preparing time: 10 minutes

To double serving size just double ingredients and you would need the entire can of Chickpeas can
To reduce size just reduce the ingredients

Ingredients:
1 can of 15oz Chickpeas

2 cups of fresh spinach
1 packet whole wheat tortillas
1 lbs. of turkey

Directions:
To prepare the hummus you need to blend on high speed the hummus and the spinach.Take the tortilla lay it flat take spared the hummus, top it off with the turkey ham and roll it up into a wrap. Mmmmm eat it up!

Tips:
You can prepare this hummus as a dip and pita bread or Chips. You can also prepare the hummus with roosted Garlic all you need to do is roost the garlic then place the garlic and the Chickpeas on the blender you can add a sprinkle of garlic powder and there you have it.
You can even prepare the raps cut them in 1 inch thick and sever as appetizers or orderves for your guests
