Pollo al Horno (Baked Chicken)




In Spanish Pollo al Horno which means baked chicken. This finger licking broiled or grilled chicken is one of my family’s favorite. It is very nutritious because it's cooked in the oven or on the grill. It is simple and economical to prepare. I used leg quarters and cut them in half, but you can use chicken thighs, legs, and wings it’s your choice. I trimed off the excess fat and if you want you can even take the skin off if you are really looking out for a slim meal. You can season it and let marinate for ½ hour, but if you let it marinate for longer time; the chicken turns out juicy and moist. You can serve it with brown rice or green salad and this will be a wonderful chicken meal for you and your family.

Preparation Time: 10 minutes
Cooking time: 55 minutes

To double serving size just add more ingredients
To reduce size just reduce the ingredients

Ingredients:
4 leg quarters cut in half
Adobo
Complete Seasoning
Garlic Powder
2 oz Mojo Criollo

Directions:
Season chicken with adobo, complete seasoning, garlic powder then you can add the Mojo. Rub in and mix all the ingredients together on the chicken, let marinate for a 20 minutes or overnight if you prefer. Grill or Bake the chicken until cooked
Bake :
To bake place the chicken in a 9 X 13” baking pan and turn on the stove on to 350 for 55 minutes or until cooked
Grill :
Place the chicken on the grill on low, but be careful not to burn the chicken.

Tips:
You can buy the ingredients in a Spanish store or in the Spanish isle in the supermarket.
