Huevos Rancheros (Ranchers Eggs)

Eggs are my husbands favorite breakfast dish. But huevos rancheros are his one and only favorite. These wonderful pouch eggs with red delicious salsa on top warm flower tortilla under it. This surely is the ultimate breakfast fit for a king.

Preparation time: 8 minutes

Ingredients:
2 tbsp oil
1 small chopped green pepper
1 small chopped onion
1/3 cup of cilantro

1/3 cup salsa or pasta sauce
1/3 cup of water
4 eggs
2 tbsp butter
4 tortillasAvocado sliced

Directions:
Place oil in a large plan on medium heat. Place the pepper, onion and cilantro.
In a cup mix the salsa or the sauce and the water together. Place the mixture into the pan.
Place the eggs on top of the sauce in the pan. Making sure all eggs are separate from each other. Cover and simmer until eggs are cooked.
Place butter in small pan on medium heat. Make sure the entire surface of the pan is filled with hot butter. Place the tortilla on top of the butter let it fry on both sides when the torilla starts to bubble then you flip it over do the same to the other side. The tortilla should be soft.  Make sure the tortilla is not tosted. 

Tip:
You can make your own salsa by putting the green pepper, onion, cilantro and 5 plum tomatoes with 1/3 cup of water into the blender.
