Lime & Garlic Chicken Thighs

This very tender, juicy and tasty chicken is one of the best and easy recipes ever. When biting into this scrumptious chicken you can taste the lime and all the spices that swirl in your mouth. You can actually taste the healthy goodness of the tomatoes. The tomatoes add a contrasting natural sweetness to the chicken.

Preparing time: 10 minutes

To double serving size just double ingredients
To reduce size just reduce the ingredients
 
Ingredients:
8 chicken thighs
Adobo
Complete Seasoning
Garlic powder
juice of 1 lime
1 clove of garlic crushed
½ tsp. dried thyme leaves
10 Cherry Tomatoes cut in halves
2 tbsp. butter or margarine
Directions:
Wash, trim excess fat, and pat dry chicken. Put chicken in a bowl toss the thighs with a mixture of Adobo, complete seasoning and garlic powder and juice of lime. Take garlic and thyme make sure all sides are covered. Refrigerate Chicken for 2 hours or more turn peaces at least once. Place thighs on a rack in baking pan with skin side up.
Bake:
Baking time 45 minutes on 425 for about 30 minutes
Melt butter in a skillet add tomatoes cook for 1-2 minutes. Place chicken in a serving platter. Place the tomatoes on top and serve immediately.


 

Tips:
This chicken calls for a good spaghetti cooked with butter, chopped cilantro, and sprinkle with parmesan cheese. A lettuce salad with crusty bread completes the meal.
