Chicken & Apples


Chicken with apples is such a wonderful refreshing dish.  It goes great with white rice or salad.  It is a dish for any occasion and easy to prepare.  I guarantee everyone who eats this dish will absolutely love it.

Ingredients:
4 chicken quarters cut and skinless
Adobo
Complete Seasoning
Garlic powder
1 tbsp olive oil
2 cloves finely chopped
2 Onions chopped
1 ½ tbsp all purpose flour
2 cups apple juice
1 bouillon cube
1 granny smith apple cut into quarters
1 red delicious apple cut into quarters
1 red bell pepper cut into chunks
2 tbsp dry parsley

Directions:
Prep. the chicken by sprinkling adobo, complete seasoning and garlic powder. Set aside.

Pour the oil on a skillet on medium heat. Sauté the garlic. Then cook the chicken for about 10 minutes or until it turns golden brown (turning it frequently).  Using a slotted spoon so that the juices stay behind transfer to a casserole/glass baking pan.
Add the onions to the skillet stirring it often for about five minutes or until softened. Sprinkle the flour stirring it for about two more minutes, then remove from heat.
Pour in the stock and apple juice return to medium heat stirring occasionally until it boils.  Place apples, bay leafs, and honey.
Pour on top of the chicken and cover. Heat the oven on 375 for about 25 minutes.
Place bell peppers and parsley on top and let it cook for 10-15 minutes or until chicken is tender.
