Chicken Ropa Vieja (shredded chicken)

This wonderful dish has the same great flavor as the Cuban dish beef ropa vieja (shredded beef) but since it is chicken it has less calories and it is healthier. This delicious stew can be served over plain white rice and ripe boil plantains. This great flavored shredded chicken breast with that great taste of Hispanic cuisine with plenty of sweet red peppers is hearty enough to eat it by itself.

Ingredients:
2 chicken Breasts
4 cups of water
2 cloves of garlic thinly chopped
Adobo
Complete seasoning
Garlic powder
1 package Sazon
1 can tomato sauce
1 tsp of ground cumin
2 medium red peppers cut into slices
2 medium yellow onions cut into slices

Directions:
On a medium size cooking pot place the chicken, garlic, sprinkle to taste: adobo, complete seasoning, garlic powder, sazon, and the water on medium to high heat and cover. Let that boil until the chicken is soft enough to be shredded. Take the chicken out place in a cutting board. Let the chicken cool of for about 20 minutes. Shred the chicken and put the chicken back into the water. Pour in tomato sauce, cumin, peppers, and onions. Turn the heat back on to medium heat stir once or twice place a lid on cooking pot for another 10 minutes or until the peppers and unions are soft and cooked.
