Lentil Soup

I was a young teen when I began my love for lentil soup. Ohhh how much I love it. I can remember the satisfaction after I ate it. My mom would prepare it and as soon as I came from school I remember the smell Mmmm….. how I loved it; specially on cold winter days. Talk about comfort food? This is one that beats all. Not even knowing how nutritious lentil are. They are rich in Protein and many other nutritious factors. With chunks of pork, carrots, potatoes, and the distinct taste of cilantro. Now, I serve my family this very satisfying meal and guess what? Now they have also learned to love it!

Serving Size: 4-6
Preparation Time: 5 minutes
Cooking Time: in a Pressure cooker 35 minutes/regular pot 45 minutes

To double serving size just add more ingredients
To reduce size just reduce the ingredients

Ingredients:
½ to 1 lbs of baby spare ribs
1 bag 12oz lentils
½ small onion chopped
½ small green or red pepper chopped
2 cloves garlic chopped
2 carrots cut into chunks
2 small potatoes cut in chunks
2 quarts of water
3 stems and leaves of Cilantro
(All seasoning to taste)
Adobo
Complete Seasoning
Garlic Powder

Directions:
Place the ribs, lentils, onions, peppers, garlic, some of the Adobo, Compete Seasoning, and garlic powder into a cooking pot. Then add 1 ½ of the water let that boil. Once it has boil and you see that the chunks of ribs are soft then you add the carrots, potatoes, the remaining water. Taste it to make sure it has sufficient seasonings (if not add more adobo, to it) you let it boil again until the carrots and potatoes are soft then add the Cilantro.

Tips:
If you rather use a Pressure Cooker all you need to do is add all the ingrediants together in the cooker and put it to medium heat and wait until its strats to for whistle let it whistle for about 5 minutes and turn it off.
