Fish with Mango Salsa

Mmmm mouth-watering tilapia fillet with some mango salsa it a delicious and healthy meal. When I was young my mom would prepare the tilapia, but she would deep fry it and with flower and like a typical Spanish household she would accompany it with rice and beans which would defeat the purpose of healthy. Now I prepare it so that it would be healthy and yummy.

To Double serving size just double the ingredients
To reduce size just use ½ of the ingredients

Ingredients:
4 tilapia fillets
Adobo
Complete Seasoning
Garlic powder
2 cloves or garlic crushed
3 tbsp. of Olive Oil
1 small onion
1 small green peper
1 small tomato or 1 plum tomato
4 stems & leaf of fresh Cilantro
1 small mango
¼ cup of fresh lemon juice
Salt & pepper to taste

Directions:First you season the fillets with the Adobo, Complete Seasoning, Garlic Powder, and the cloves of garlic. Poor in the oil on medium heat on a frying pan then wait for about 4-5 minutes waiting for the oil to get hot (you’ll know the oil is hot when you sprinkle water and it and it’ll start popping) when the oil is hot then you can put the fish to fry. Fry it until brown in both sides.

SALSA:
Thinly chop the onion, pepper, tomatoes and the Cilantro. Peal and cut the mango in small cubs like size. Mix all in a bowl, poor in the lemon juice and salt and pepper to taste.
