Stuffed Mushrooms




These mouthwatering stuffed mushrooms are delicious appetizers which are easy to prepare.  All you need is large portabella mushrooms, shrimps, bacon and shredded cheese.  They are great for parties or gatherings. Your guest will love them and ask for more, for sure!

Serving Size:  4
Preparation Time: 20 minutes
Cooking time: 20 minutes

Ingredients:
16 Large Portabella Mushroom
16 Uncooked Medium or large shrimps
Completo 
Garlic powder 
½ package of turkey bacon 
Mozzarella shredded cheese 

Directions:
De-stem the mushroom set aside, place the shrimps in a bowl sprinkle completo and garlic powder.
Cut the bacon  ½ inch cook the bacon set aside. 
Take the mushrooms  place a shrimp inside the cavity.
Place in oven on 400 for 10 minutes or until the shrimp is red and cooked
Place a piece of bacon on top of the shrimp and place a tbsp of cheese on top of the mushroom place back in the oven or another 10 minutes or until the cheese has melted.  Cool and enjoy!

Yogurt and Fruit Popsicle


This is a great, healthy and delicious snack when your kids come home from school.
This recipe is easy to prepare and all who taste it will love it.  All it take is plain yogurt some kind of sweeteners, for example sugar, agave or honey if you want, and fresh fruits.  I loved to make treats for my kids when they where younger.  This is also a wonderful treat for kids birthdays and kids gatherings. This is in all a fine treat.

Serving Size: 16 popsicles
Preparation Time: 5 minutes
Freezer Time: 8 hours

Ingredients:
32 oz plain yogurt
Sugar/honey/agave to taste
2 fresh kiwis
¼ cup blue berries
1 small banana sliced
¼ cup fresh strawberries sliced
Popsicle molds  

Directions:
Place the yogurt in the a bowl mix sweetener.
Place pieces of the fruits in the mold then pour the yogurt into the molds.
Can alternate and pour yogurt into the mold to fill it have way then place pieces of fruits on it.
Then freeze them for about 8 hours and they are ready to devour

Tips:
If you would like you can puree the fruit and mix it in with the yogurt it also tastes delicious.

Watermelon Slushy Cocktail

This watermelon cocktail is a great summer drink.  It is cool and refreshing supper for outdoor activates, such as pool parties, barbecues, etc.  Kids as well as grownups can enjoy it, because you can drink it with alcohol or alcohol free.


Serving Size:  4
Preparation Time: 3 hours and 15 minutes

Ingredients:
3 cups of frozen watermelon cubes
1 cup water
3 tbsp maple syrup
Juice of 2 lemons
2 shots of tequila (optional)
A blender

Directions:
Take the watermelon, water, syrup and lemon juice an tequila (optional) put these on a blender.  Blend on high for about 3 minutes or until is juice is like a slushy. You put it back in the freezer for about 1-2 hours and enjoy.

Stuffed Green Zucchinis


Have you ever had left over meat and don’t know what to do with it because it not enough for another meal?  Do what I do, create stuffed zucchini with stripes of meat, rice and plenty of cheese. Mmm!!! It makes my mouth water only thinking about it.


Serving Size:  4-6
Preparation Time: 20 minutes
Cooking Time: 15 minutes

Approximate Calories per Serving: 223

Ingredients:
3 medium to large zucchinis
Cooking spray/butter spray
¼ cup cooked rice
¼ cup of shredded beef or chicken
½ cup Mexican four cheese shredded

Directions:
Wash and dry zucchinis cut horizontally in half.
Spoon out the inside of zucchinis place the inside in a microwave safe dish.
Mix in the rice and meat with the inside of the zucchinis.
Place mixture in microwave for about 2 minutes or until the inside of the zucchini is cooked.
Spray cooking spray all over the zucchinis.
Place the zucchinis in a glass pan and stuffed the zucchinis with the mixture.
Place in the oven at 350 for 10-15 minutes or until zucchinis are almost soft.
Spread the cheese all over the top of each open side of the zucchini and place back in the oven for about 5 more minutes or until cheese has melted.


Tips:
You don’t have to use meat/rice at all or only one.  You also can use the juices of the left over meat.

Strawberry and Banana Cream


This is a great strawberry season dessert.  If you love strawberries as much as we do, wait until you try this desert. You would love this strawberry and banana Cream dessert.  This is absolutely wonderful when you are craving sweet.  It is delicious, easy and in ten minutes you have yourself a wonderful dessert.

Preparation Time: 10 minutes

Ingredients:
4 Bananas
1 lbs. strawberries, plus extra strawberries for garnish
1 ¼ cup heavy cream, whipped
Sugar (if necessary)

Needs:
Food processor

Directions:
Peel the bananas and put in a food processor with the strawberries. Make into a puree and put in large bowl.
Stir the heavy cream into the whipping cream (sweeten if desire)
Mix the puree with the whipping cream.
Chill in the refrigerator until ready to serve.
Garnish with strawberry and serve with cookies.

Isaac’s Healthy Fruit Smoothie

My nephew Isaac gave me this fabulous   recipe for me to try, because he likes to stay healthy throughout the week.  It consist of freshly squeezed orange juice, freshly squeezed apple juice, and banana.  This is fabulous because you can make this everyday or make it once a week and drink it throughout the week.

Serving Size: 4
Preparation Time: 10 minutes

Ingredients:
2 apples
3 oranges
1 banana
2-3 cups of cubed ice

Tools:
Blender
Juicer
Directions:
Juice the apples and oranges
Put ice, apple and orange juice and the banana in blender. 
Blend it smooth (until you don't hear the ice being crushed) and

Healthy Papaya Smoothie


I don’t know why, but I believe that papayas are in season at least by my neck of the woods, because papayas are less expensive now than at any other time.  Papayas have antioxidants besides when very ripe they are very sweet and tasteful.  Ether way it is wonderful to enjoy a delicious papaya shake.  All you need is milk, a very ripe papaya and some kind of sweetener, (a touch of cinnamon) and waa la! Enjoy.  It is easy to prepare and delightful in taste.

Ingredients:
1 ½ cup of papaya
16oz (skim)milk
Sweeten to your taste
2 tbs. ground flax seed
16 ice cubes
Pinch cinnamon powder


Preparation:
Blend together papaya, milk, sugar, and flax seed. Then pour into a glass place 4 ice cubes and cinnamon.

Tip:
You can take agave instead of sugar or artificial sweetener.
