Shrimp Creole


My mom came across this recipe a long time ago when we lived in New Orleans. Now, since I have acquire her cooking skills I know prepare it.  This Shrimp Creole taste divine.  The Cajun spices blend in with the wonderful shrimp flavors.  This dish is so amazing your guest will be asking for seconds.

Ingredients:
1 ½ -2 lbs large-XL shrimps
4 slices of thick bacon cut into small pieces
2 tbsp blackening seasoning
1 cup diced tomatoes
¾ cup white wine
2 tbsp Crushed red pepper flaxes
½ cup scampi sauce 
1 lemon
¼ bunch parsley
2 tbsp minced garlic


Directions:
Place shrimp in a bowl and sprinkle with blackening seasoning. Set aside.
Place bacon in a large pan on medium heat 5-7 minutes or until bacon is almost done.
Add shrimp to bacon cook for 1 minute.  Stir in tomatoes, wine, garlic, and pepper flaxes. Cook for about 2-3 minutes or until shrimps turn pink.
Stir in the scampi sauce and lemon juice top with parsley.

Tip:
You can serve it with angle hair pasta or white rice.
