Ajiaco

Ajiaco is a wonderful Colombian chicken soup. This awesome home inviting meal is made with chicken breasts and plenty of different kinds of potatoes, yucca, and fresh corn on the cob. After is prepared it goes well with heavy cream, capers, a side dish of white rice and avocado. This is a conferring meal especially on cold rainy days.

Ingredients for sofrito:
1 bunch of cilantro
5 cloves of garlic
2 medium size green peppers chopped
1 large onion chopped
3 tbsp vinegar
2 tbsp salt
2 tbsp pepper
 
Ingredients:
Sofrito
3 lbs chicken breast
2 quarts of water
1 fresh corn cut into 4 pieces
Adobo
Complete Seasoning
Garlic powder
4 chicken bouillon cubes
2 medium size fresh or frozen Yucca root
20 red potatoes was and cut in half
5 russet potatoes cut in half
30 Papa criolla white small Colombian potatoes
1 cup heavy cream
1 medium to large ripe avocado
½ cup capers

Directions for sofrito:
On a blender blend together cilantro, garlic, green pepper, onions, vinegar, and salt and pepper. Blend until it becomes liquefy

Directions:
On a large cooking pot place chicken, corn and sofrito let that sit there for 20 minutes.
Pour the water on the pot and place pot on medium to high heat. Sprinkle adobo, complete seasoning, garlic powder, and bouillon cubes. Cover and let boil for about 25 minutes. Once the chicken is soft place the potatoes and the yucca on the cooking pot. Cover and let boil again for about 25 minutes or until yucca and potatoes are soften or until you see that the chicken and the potatoes nearly dissolve.
Serve the soup, rice, heavy cream, chives and avocado separately.

Tips:
In order to know if the yucca is fresh you need to brake in half if it is completely white inside then you know it is completely fresh but if it has black spots or black lines it is not fresh. To be in the safe side you can purchase the frozen yucca in a bag instead in the freezer section of the grocery store. You can also buy the papa criolla in a bag also in the freezer section of the grocery store.
